Air-Fried Parmesan-Crusted Mushrooms with Hot Honey and Mayo

To make the hot honey, place honey and chilli flakes in a small saucepan and bring to the boil. Remove from the heat, stir in vinegar and salt, then pour into a small dipping bowl and allow to cool.
In a shallow bowl, combine parmesan and panko crumbs. In a separate bowl, whisk together eggs and milk. Place flour and salt in another bowl.
Toss the mushrooms in flour to coat, then dip each one into the egg mixture before rolling in the parmesan crumbs. Press lightly to help the coating stick. Set aside on a plate and repeat until all mushrooms are crumbed.
Arrange the mushrooms in the basket of an air fryer, set to 180°C, and cook for 12 minutes until golden and crisp.
Remove from the fryer, season with sea salt, and serve hot with mayonnaise and a drizzle of hot honey.
